Mint Raspberry Lemonade

1-6 oz can of frozen lemonade concentrate
1-10 oz package of raspberries
1/2 cup loosely packed fresh mint
1/4 cup sugar

Combine sugar, mint leaves, and 1 cup water in a saucepan. Bring to boil, let stand 5 minutes. Remove mint leaves. Add mint-flavored water to reconstituted lemonade. Add raspberries. Makes 8 servings.

Mom's Famous Spinach Salad
 When we get together for family gatherings, there is always good food, and there is always one person behind the best. My mom has always had a talent for putting together meals - especially for a crowd. Just the thought of certain recipes like Navajo Tacos or Raspberry Mint Lemonade bring back the memories of family togetherness.
One recipe we can always count on being a part of our meals is mom's delicious Poppy Seed Dressing and a fabulous salad to match. Mom can whip up this dressing without measuring and throw together a unique and mouthwatering salad in no time. I wasn't fond of the feta cheese at first but now I believe it's what makes the salad. The flavors of tangy and sweet are truly delightful. Throw in some leftover chicken and you've got yourself a very satisfying meal.

Poppy Seed Dressing
 

Combine ingredients.

Suggested salad additions:

  • dark greens such as spinach
  • feta or blue cheese
  • fruit such as grapes, apples, or dried cranberries
  • sunflower kernels or other nuts

Peanut Butter Oat Bars


Here is an easy recipe that's sweet, but filling.
You could experiment adding nuts or omitting the chocolate
and adding cinnamon. I have doubled this recipe for sharing and
there was no change to the cooking time or temperature.
My only warning is: they disappear fast!

Stuffed Bell Peppers


This is my very own recipe so I hope I can explain it well enough. I can honestly say that I'm not crazy about bell peppers but I think these are fabulous. For children I cut the tops off the fresh bell peppers into strips and serve with the cooked chicken, rice, and fresh spinach with ranch dressing on the side.

Also, I should note that some of the ingredient measurements are approximate. It's more like a handful of spinach, mushrooms, and walnuts.

Ingredients:
1 cooked chicken breast, diced
1 cup mozzarella cheese
1/2 cup cooked wild rice
1/2 cup fresh mushrooms, chopped
1/2 cup fresh spinach, chopped
1/4 cup walnuts, chopped
salt and pepper to taste
3 bell peppers, tops cut off and insides seeded

As a time saver, I prepare the peppers first and start to roast them in a 400 degree oven while I'm cooking the chicken and preparing the filling, about 20 minutes.

Remove the bell peppers from the oven and stuff with the filling. Return to the oven for 10 - 15 additional minutes.
